Ok so I just started mapping, so don't go mad on this question.
As the topic states, all the players models etc are weird colors, just like in the tutorial video. I checked the continued tutorial too and added two reflection probes, but they are still weird colored.

So, how should the reflection probes and where should they be put? "Key areas", but what are those?

You need to cover the playing area with tool texture 'light grid volume'. Draw a box with it around the palying area of the map. Complie and see if that helps

I'd start off using the lightgrid volume texture in a couple of your larger areas first, and see if that fixes your problem. I've been able to get away with that so far, and from what I understand, it's better to do so because the grids use up memory.

Also make sure you have inserted worldspawn values and have compiled the lighting in your map.
